A descriptive analysis based on SNI 2907-2008 was carried out to explore the grade and taste of coffee by the Indonesian Coffee and Cocoa Research Institute. The findings show that the quality of Arabica coffee from Dogiyai Regency was grade 2, better than in other regions. Green coffee beans originating from Walesi District, Jayawijaya Regency and Okbibab District, Pegunungan Bintang Regency, did not conform to SNI 2907-2008. The beans from both origins contained moisture content >12% and had mould. The cup quality of the samples from five regions was specialty coffee, except one sample from Pegunungan Bintang Regency was deemed non-specialty coffee. Each origin produced unique taste notes. The findings can contribute to a better understanding of the characteristics and selection of cup quality of Arabica coffee from Papua.
