Zusammenfassung:Light or ethylene treatment was reported as an efficient tool for enhancement of the secondary metabolites in crops. And isoflavone-rich soybean leaf production could be achieved by the treatment of ethephon or ethylene in pre-harvest stage. However, there was no report on the ethylene application effect on soybean leaf in post-harvest treatment. In here, the two elicitors for flavonoid production effect were investigated on soybean leaf during the post-harvest drying process. Ethylene treatment effectively induced total flavonoid contents ($912-920mg-QE\;100g^{-1}$) up to 28% in comparison with non-treatment ($718 mg-QE\;100g^{-1}$). In addition, ethylene was needed for up to three hours initially at $60^{\circ}C$ during the drying process. On the other hand, light treatment including UV and visible lights negatively affected on the total flavonoid contents ($738-792mg-QE\;100g^{-1}$) up to 18% (p < 0.01) and the total phenol contents up to 27% ($1,033-1,163mg-QE\;100g^{-1}$). 작물에서 이차대사산물의 생산유도를 위한 광 혹은 ethylene 처리에 관한 연구는 수년간 진행되어 왔다. 최근에는 콩 개화기 때 ethylene 혹은 ethephon 처리를 통하여 isoflavone 고함유 콩 잎 생산에 관한 연구가 있었다. 하지만, 이러한 처리 공정은 콩 생산을 대신하여 콩 잎을 생산하는 기법이며, ethylene 및 ethephon의 포장처리에서 많은 기술적 어려움을 포함하고 있다. 따라서, 본 연구에서는 수확된 콩 잎을 건조하는 과정 중 광과 ethylene을 처리하여 콩 잎 중 total flavonoid 변화를 유도할 수 있는지 평가하였다. 콩 잎을 $60^{\circ}C$ 건조 과정 중 ethylene 처리시 total flavonoid 함량은 무처리구와 비교하여 최대 28% 증가한 $912-920mg-QE\;100g^{-1}$ 수준을 확보할 수 있었다. 또한, 건조 중 콩 잎의 flavonoid 함량 증가에 필요한 ethylene 노출 시간은 최대 3시간을 넘지 않음을 확인하였다. 반면, 자외선과 백색광을 ethylene과 함께 처리시 total flavonoid 함량은 대조구에 비해 오히려 최대 18% 감소한 $738-792mg-QE\;100g^{-1}$으로 확인되었다.
