Les produits d'hydrolyse sont exposés à une base telle que l'hydroxyde d'ammonium du fait de la neutralisation de l'acide (pH compris entre 6 et 7). Les phases solides et liquides sont séparées et la phase liquide contenant la solution sucrée est mise à fermenter avec de la levure de bière, et lorsque la fermentation est achevée, l'alcool éthylique est distillé, sous forme de produit final, à une concentration de 96,7 % en volume. |
