La présente invention concerne un procédé de production sélectif de composé K et composé Y, qui sont à l'origine présents dans le ginseng à l'état de traces, à partir des saponines du ginseng et, plus spécifiquement, un procédé permettant d'obtenir les composés cibles recherchés, à savoir, le composé K et composé Y, à des rendements élevés, par traitement des saponines, obtenues à partir du ginseng, avec des enzymes particulières pour convertir structuralement lesdites saponines.
