La présente invention vise à fournir des procédés de production de ferments contenant de la nisine et de formulation de tels ferments sous forme de conservateurs. La présente invention vise particulièrement à fournir des procédés améliorés de production de ferments contenant de la nisine par culture simple et efficace (groupe) et transformation en aval simple en un produit liquide, semi-liquide ou à poudre sèche ayant une teneur en nisine et une stabilité suffisantes, de bonnes caractéristiques de manipulation et des caractéristiques organoleptiques satisfaisantes. L'invention concerne de tels procédés, ainsi que les produits qui peuvent être obtenus à l'aide de ceux-ci et leur utilisation comme conservateur alimentaire.
