La présente invention porte sur une composition poreuse comprenant de la matière grasse, du sel et des hydrocolloïdes. Ces compositions peuvent être utilisées comme bouillon cubes et ont l'avantage d'être très résistantes et cependant de bien se dissoudre. L'hydrocolloïde peut servir d'épaississant lors de la préparation d'un bouillon.
