Le procédé de production d'acides organiques à partir d'une biomasse selon l'invention comprend les étapes suivantes : (a) production des acides organiques par fermentation d'une biomasse; (b) concentration d'au moins 30 % des acides organiques ainsi produits; et (c) récupération des acides organiques par distillation fractionnée de l'acide organique concentré.
