Prevzdušnená masa je v neemulgovanej forme a obsahuje mliečne proteíny, cukry, tuk a vodu. Ďalej je opísaný spôsob prípravy tohto prevzdušneného potravinového výrobku a plneného zloženého výrobku. Prevzdušnená masa vydrží niekoľko mesiacov pri teplote až 30 °C bez akejkoľvek zmeny v štruktúre, textúre a chutnosti.ŕ
