La presente invención se refiere a el uso del desperdicio de crustáceos para obtener quitina mediante la desproteinización con proteasas. El desperdicio fue previamente tratado con solución amortiguadora de fosfatos y solución de cloruro de potasio para remover la proteína sarcoplásmica y miofibrilar, posteriormente se desmíneralizó con solución de ácido clorhídrico. Durante el tratamiento de remoción de proteína sarcoplásmica y miofibrilar se obtuvo un 82% de desproteinización.
