description The present invention pertains to methods for obtaining and using biologically active concentrates from raw materials of plant origin, particularly, to production of inulin-containing extracts and syrups from topinambour tubers (Helianthus tuberosus). The offered method for production of inulin-containing extracts and syrups from finely divided topinambour tubers characterized in that for extraction of tubers are used dried and roasted particles of topinambour tubers that contain products of Mayar-reaction and caramelization as source for taste, color and aroma of formed extracts. The extraction could be provided using water at a temperature from 20 to 100 centigrade during 15 to 60 min. and concentration of particles suspension from 5 to 20 percent calculated to dry matter, by further separation of solid fraction and pasteurization of clear fraction. For obtaining long-time storage product, the extract of topinambour tubers could be evaporated in vacuum apparatus at a temperature from 60 to 90 centigrade achieving dry matter content in syrup from 60 to 70 percent. For increasing content of Mayar-reaction products in syrup, there is offered to make evaporation at an atmospheric pressure.
