Zusammenfassung:The present invention relates to a Bacillus velezensis TK01 strain (depository number: KCTC14772BP) derived from fermented sauces, and food engineering applications thereof. A fermentation strain exhibits excellent amylase and protease secretion capabilities. By utilizing amylase and protease secreted by the fermentation strain of the present invention, it is possible to convert polysaccharides and protein components abundant in grains into low-molecular-weight substances. By inoculating grains with the fermentation strain or a culture containing the fermentation strain, it is possible to produce a fermented grain product and/or fermented food with excellent nutritional components.
