Zusammenfassung:The present invention relates to a method for manufacturing a tofu coagulant using crustacean shells and a tofu coagulant manufactured thereby. The method comprises the steps of: (A) crushing crustacean shells; (B) incinerating the crushed crustacean shell powder at 500-1000°C; and (C) stirring the incinerated crustacean shell powder and an aqueous acetic acid solution. The production of tofu using the manufactured tofu coagulant can increase the production yield of tofu and the protein coagulation rate and can further enhance the functionality. 본 발명은 갑각류 껍질을 이용한 두부 응고제의 제조방법 및 이에 따라 제조된 두부 응고제에 관한 것으로 (A) 갑각류 껍질을 분쇄하는 단계; (B) 분쇄된 갑각류 껍질 분말을 500 내지 1000 ℃에서 회화시키는 단계; 및 (C) 회화된 갑각류 껍질 분말과 아세트산 수용액을 교반하는 단계;를 포함하여 제조된 두부 응고제를 이용하여 두부를 제조하면 두부의 제조수율 및 단백질 응고율을 높일 수 있으며 관능성을 보다 향상시킬 수 있다.
