Zusammenfassung: | PURPOSE: A process for producing Chlorella containing omega-3 fatty acids is provided, thereby selectively accumulating high concentration of omega-3 fatty acids including EPA (Eicosa Pentaenoic Acid) and DHA (Docosa Hexaenoic Acid) in Chlorella, so that an additional step for reinforcing the emulsified omega-3 fatty acids in Chlorella is not needless. CONSTITUTION: The process for producing Chlorella containing omega-3 fatty acids comprises culturing Chlorella in the concentration of 10 to 15% WCV, the concentration of glucose as a main carbon source in the medium being maintained at 5 to 15 g/L at the end of fermentation; and adding 0.5 to 5% of EPA and DHA monoglyceride or EPA and DHA sugar-ester type of omega-3 fatty acids as subsidiary substrates into the cultured medium at the end of fermentation to transfer the omega-3 fatty acids into Chlorella cells within a short period, wherein the concentration of EPA or DHA in Chlorella based on the total weight of lipid is 1 to 50%. |
