Zusammenfassung: | Sweet pickles radishes according to the present invention include fructose polymers to have an excellent edible fiber function, inhibit cholesterol absorption, alleviate obesity, and promote absorption of bivalent metal ions (Fe^2^+, Ca^2^+, Mg^2^+, Cu^2^+, and Zn^2^+) which are minerals, so the sweet pickles radishes are beneficial to health. Moreover, the sweet pickles radishes according to the present invention have an improved desalting effect by adjusting a temperature of water to predetermined range when being produced. Thus, the crispy texture thereof can be maintained, and freshness is maintained even when the sweet pickles radishes are stored for a long time. Accordingly, high storage stability can be ensured.
