The phase containing oil droplet is passed through a coagulation zone filled with fibrous material to obtain carotene droplet grown to a diameter of about 5-10mm. The fibrous material is composed of a material wettable with a fatty acid lower monoalkyl ester (e.g. PVC, nylon, polyester or glass wool) and the packed density of the fibrous material is 0.05-0.3g/cm . The above process can be performed without using a large-sized separation apparatus.
