When frying of a food by a fry pan 1 filled with fry oil is finished, the food is taken out from a bucket 8, and a valve 29 is opened to carry the fry oil in the pan 1 to a recycle tank 31 through a rough filter 30 by the dead weight. After frying is repeated several times, the fry oil after use in the tank 31 is circulated to the bypass passages to highly precisely filter it. Namely, a vacuum pump 50 is operated to reduce the internal pressure of a first tank 38, whereby the fry oil in the tank 31 is guided to the tank 38 through a middle purity filter 37. Then, the pressure of a second tank 40 is reduced, the tank 38 is returned to the ordinary pressure, and the fry oil in the tank 38 is moved to the tank 40 through the high purity filter 39.
