Zusammenfassung: | PURPOSE: To obtain a frozen sweet, uniform in color or taste and having texture as if the frozen sweet is lightly crushed by chewing for shaved ice, cracked ice or a popsicle by freezing a fluid gel. CONSTITUTION: A gelling agent such as gellan gum or carrageenan is added to water and thermally dissolved and the resultant solution is then cooled to the gel point of the gelling agent or below while being stirred to provide a uniform and smooth fluid gel, which is subsequently frozen to afford frozen sweet containing a syrup or a granular food uniformly dispersed in the fluid gel if added thereto. |
