Zusammenfassung:PURPOSE: To simply obtain a coffee extract solution, having a high transparency and excellent in flavor even after preservation for a long period at a low cost by carrying out the extraction treatment of roasted coffee beans with water in the presence of xanthan gum. CONSTITUTION: Roasted coffee beans are extracted with an aqueous solution of xanthan gum at preferably 10-500ppm concentration to afford the objective extract solution. A method for extraction may be any of a dripping type, a siphon type, a jetting type or a multistage type and the sterilization treatment of the extract solution may be performed by retort, ultrahigh temperature(UHT) sterilizations, etc. Thereby, a beverage containing a coffee, a dessert containing the coffee or an instant coffee, etc., can be produced.
