description PURPOSE: To provide a method for producing shochu (a Japanese low-class distilled spirit) containing many aroma ingredients and having a quality increased in flavor in good reproducibility by simple operations. CONSTITUTION: In this method for producing the shochu with a single distiller, a process for distilling a middle distillation fraction is performed, while 20-80%(v/v) of the concentrated solution corresponding to the middle distillation fraction is directly recycled into an unrefined shochu. One or more condensers are preferably used. After the distillate is changed into the middle distillation fraction, the condensed solution is preferably discharged from an intermediate point and/or an outlet of the condenser and subsequently recycled into the unrefined shochu. Therein, the ethanol concentration of the condensate is preferably 15-79%(v/v).
