Zusammenfassung: | To provide an apparatus which uses electricity as a heat source for baking, and nonetheless can produce Baumkuchen having texture and taste sense comparable with those of Baumkuchen produced by the existing apparatus using gas.SOLUTION: The apparatus comprises: a plurality of rolling pins 17 horizontally spaced at intervals along one circumference inside a baking chamber, and revolving while rotating; a plurality of infrared heaters 23 opposed from the outside to the plurality of rolling pin 17 side; a heater guide hood 29 surrounding the plurality of infrared heaters 23 from the outside concavely; and steam guiding means guiding a flow of steam M to the plurality of infrared heater 23 side along an inner surface of the heater guide hood 29. The infrared heaters 23 are each used as a heater for baking, and the inner surface of the heater guide hood 29 is used as the guide surface of the flow path of the steam M, and thereby the steam M is filled into circumference of the infrared heater 23.SELECTED DRAWING: Figure 3
【課題】焼成用の熱源として電気を利用しながら、既存のガスを利用した装置と比べても食感や味覚の点で遜色のないバームクーヘンを製造できる装置の提供。【解決手段】焼成室の内部に1つの円周に沿って水平方向に互いに間隔をあけながら並べられ、自転しながら公転する複数の麺棒17と、複数の麺棒17側に外側から対向する複数の赤外線ヒーター23と、複数の赤外線ヒーター23を外側から凹状に囲むヒーターガイドフード29と、ヒーターガイドフード29の内面に沿って複数の赤外線ヒーター23側に水蒸気Mの流れを誘導する水蒸気誘導手段とを備え、赤外線ヒーター23を焼成用ヒーターとして利用し、ヒーターガイドフード29の内面を水蒸気Mの流れ経路のガイド面として利用することで、赤外線ヒーター23の周囲に水蒸気Mを充満させる。【選択図】 図3 |
