In particular, when added to a food or drink, umami is provided or enhance, salt teste is enhanced, and sweetness is enhanced. 【課題】飲食品や香粧品に添加した場合に好ましい香気を付与乃至増強し、また、飲食品に添加した場合には香気に加え、呈味として旨味、塩味、甘味、乳のコクを増強する香料化合物を提供すること。【解決手段】2−(フェニルアルキロキシアルキル)ピリジン誘導体または2−(フェニルアルキルチオアルキル)ピリジン誘導体は該化合物を有効成分として飲食品または香粧品に添加することにより天然感あふれる香気が付与される。また、特に、飲食品に添加した場合には旨味の付与ないし増強、塩味の増強、および、甘味が増強され、特に、乳、乳製品、乳若しくは乳製品を含有する飲食物、又は乳製品代用品に含有させことにより、乳のコクが増強される。【選択図】 なし |
