Zusammenfassung: | PROBLEM TO BE SOLVED: To provide an acidic coconut milk that can be stored stably for the long term and has high palatability.SOLUTION: An acidic coconut milk satisfies following conditions that: (A) a degree of polymerization of glycerol is 4-10; (B) the total content of palmitic acids and stearic acids among constituent fatty acids is 80% or more; and (C) an esterification ratio is 7-20%, and comprises a specific emulsifier such as polyglycerol fatty acid ester.
