Zusammenfassung:	PROBLEM TO BE SOLVED: To provide an acidic coconut milk that can be stored stably for the long term and has high palatability.SOLUTION: An acidic coconut milk satisfies following conditions that: (A) a degree of polymerization of glycerol is 4-10; (B) the total content of palmitic acids and stearic acids among constituent fatty acids is 80% or more; and (C) an esterification ratio is 7-20%, and comprises a specific emulsifier such as polyglycerol fatty acid ester. 【課題】長期間安定に保存でき、嗜好性の高い、酸性のココナツミルクを提供する。【解決手段】（Ａ）グリセリンの重合度が４〜１０（Ｂ）構成脂肪酸のうち、パルミチン酸、ステアリン酸の合計が８０％以上（Ｃ）エステル化率が７〜２０％の条件を満たし、ポリグリセリン脂肪酸エステル等の特定の乳化剤を含有する酸性のココナツミルク。【選択図】なし
