Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method of preserving a probiotics substance and delivering the probiotics substance to a specific part of gastrointestinal system.SOLUTION: Probiotics microorganism is separated into protein having film forming property, carbohydrates and lipid in oil-in-water emulsion or separated into the protein having film forming property and carbohydrates after dissolving in oil so that the probiotics microorganism is to be a microcapsule. The probiotics may be dissolved in oil, emulsified with aqueous suspension and dried so as to generate a capsule in which probiotics is dissolved in oil. These may be dried and converted into powder. It is preferable that the probiotics are suspended in oil when the probiotics are sensitive to water. Preferable protein is casein or a whey protein. Carbohydrate is a hardly digestible starch or a saccharide having reduced saccharide terminus. When the probiotics are sensitive to oxygen, protein and carbohydrate are heated and the resultant form the Maillard reaction is capsulated with capsule forming film.
