Zusammenfassung:PROBLEM TO BE SOLVED: To provide a water-soluble elastin mixture usable as a functional food: and to provide an industrial method for efficiently producing the water-soluble elastin mixture. SOLUTION: The water-soluble elastin mixture comprises water-soluble elastin having a molecular amount of about ≤40,000, and peptide derived from the water-soluble elastin: wherein the mixture has a protein content of ≥90 wt.% detected in accordance with a burette method, and has a content of desmosine and isodesmosine of 1.8-4.0 wt.% based on the whole of the amino acid.
