description PROBLEM TO BE SOLVED: To provide a bulb vegetable processing machine provided with "a root extending part" as a root arranging means, for reducing parts, as much as possible, remaining uncut after root cutting of bulb vegetable to improve its finishing condition. SOLUTION: The bulb vegetable processing machine is provided with a conveying part 2 for conveying the bulb vegetable (an onion 6), a cutting part 3 for cutting the roots and the leaves of the onion 6, and a root extending part 4 for pinching the roots in front of the cutting part 3 to extend the roots. The upper stream part of the root extending parts 3 are disposed at the upper parts of the downstream side of a pair of rollers 26R, 26L which the root extending part 4 has. A plurality of blades 41d, 41d, ... are set at the surface of the outer peripheral part of the roller 26 along its tangent line while making one end free, and the blade 41d is attached to a position where the roller 26 and the cutting part 3 (root cutting part) are not overlapped with each other.
