SOLUTION: This cooking and stirring apparatus includes a cylinder 5 for storing the cooking material, a refrigerant route 29 having a cooling jacket 27 in the outside face in the upper side of the cylinder, a refrigerant flow volume adjusting means 39 and the like adjusting the flow volume of the refrigerant, a heat medium route 47 having a heating jacket 45 in the outside face in the lower side of the cylinder, and a heat medium flow volume adjusting means 55 adjusting the flow volume of the heat medium. This apparatus can thus cover the wide temperature range by the use of two types of heat (cold) media, cook the cooked material at an appropriate temperature, and quickly cool the cooked product simultaneously with the finish of the cooking without contacting with outside air.
