Zusammenfassung: | PROBLEM TO BE SOLVED: To prepare a water-in-oil emulsion for spray enabling effective and easy application via a spraying method, by which bread having excellent palate feeling can be obtained without applying a large quantity of the emulsion to the bread. SOLUTION: This water-in-oil emulsion for spray has the following structure: SFC of oil phase comprising oil and fat and an emulsifier, or comprising oil and fat, an emulsifier and wax is 3-8 in a temperature range at 10-30°C; the oil phase is contained at 55-85 wt.%; the emulsifier preferably contains at least polyglyceryl condensed ricinoleic acid ester; and the oil and fat preferably comprises a mixture of high-melting oil and fat with liquid fat.
