Zusammenfassung:PROBLEM TO BE SOLVED: To provide a method for producing a sweet-tasting freeze-dried food, easily performing the freeze-drying treatment, giving the freeze dried food stably preservable and easily reconstituting a liquid food showing a sufficient sweet taste by hot water or water in producing the sweet-tasting freeze-dried foods such as the food for preparing to begin with sweet sake, a hot sweet ginger drink, a hot sweet Chinese quince drink, powdered green tea, black tea, a sweet bean soup or the like. SOLUTION: This method for producing a freeze-dried food for preparing the sweet sake is provided by (1) freeze-drying a composition containing a main raw material, a highly sensitive sweetener, a saccharide sweetener and water, and having 200-420 pts. wt. water content, at least 30 pts. wt. highly sensitive sweetener content based on sugar in sweetness, based on 100 pts. wt. dried solid portion in the composition and 10-30 Bricks sugar degree. Or, the method for producing the freeze-dried food for preparing the sweet sake is provided by (2) freeze-drying the composition containing the main raw material containing malted rice and sake lees, the highly sensitive sweetener, the saccharide sweetener and water, and having 250-350 pts. wt. water content, at least 30 pts. wt. highly sensitive sweetener content based on sugar in sweetness, based on 100 pts. wt. dried solid portion in the composition and 10-25 Bricks sugar degree.
