Zusammenfassung:	PROBLEM TO BE SOLVED: To obtain a new food material readily usable for daily eating habit and containing a free radical scavenger ingredient at a high concentration and stably feed the free radical scavenger prepared by concentrating the active ingredient and a composition containing the free radical scavenger. SOLUTION: This free radical scavenger is obtained by using an ingredient prepared by extracting a defatted material of a seed of Perilla ocimoides or a germinated material thereof as a raw material with water and/or a hydrophilic organic solvent and further using a fractionated refined material of the extract as an active ingredient. A composition such as a food, a cosmetic or a medicine containing the scavenger is obtained. The seed of Perilla ocimoides is germinated to provide a new food material improved in food suitability and containing the free radical scavenging substance at a high concentration.
