Zusammenfassung: | The invention relates to the manufacture of alcoholic drinks. The ageing process which is the subject of the invention is the type comprising the activation of oak staves by treating them with heat in the presence of an oxygenated medium, the ageing of the spirit in the presence of activated oak staves and the separation of the staves from the aged spirit, and is characterised in that the staves obtained after separating the aged spirit are subjected to a heat treatment by the cyclic action, on the said staves, of a multimode electromagnetic field of stationary waves with a frequency of 2000 to 4500 MHz up to a heating temperature of 35 to 55 DEG C, with simultaneous flushing with an oxygenated fluid, with extraction of the alcohol vapours from the staves until the residual alcohol content of the staves is 5 to 10%, and in that between the cycles of action of the multimode electromagnetic field, the staves are cooled by the oxygenated medium to a temperature of 15 to 25 DEG C and the alcohol vapours are trapped by the oxygenated medium and condensed. The invention can be used especially in the food and pharmaceutical industries and the like.
