The first actuating means are adapted to, substantially without moving the viscera, move the support means and the jaw parts into the body cavity and during this movement effect tilting of the support means and the jaw parts such that the eviscerating member substantially follows the contour of the breastbone (50) of the bird; and wherein the viscera are substantially in a natural, anatomically undisturbed situation until the viscera are clamped between the closed jaw parts.
