Leavening acid composition
Acid raising agent for baking is based on monocalcium phosphate and has a neutralisation index (= the wt. of NaHCO3 required to neutralise 100 pts. wt. of the acid neutralising agent) of 44-63 (pref. 44-57; esp. 46-55).
