Zusammenfassung:The invention relates to a recombinant deoxyribonucleic acid (DNA) which can be isolated from Aspergillus soyae, which is coded for a leucine aminopeptidase (LAP) and has a nucleotide sequence corresponding to that given in SEQ ID NO:1 for ripe LAP or one derived thereform, which hybridises in stringent conditions with the nucleotide sequence given in SEQ ID NO:1 for ripe LAP. The invetion also relates to vectors, transformed host organisms and a process for the production of LAP. Enzyme products for the production of protein hydrolysates and correspondingly produced protein hydrolysates also form part of the invention.
