description 1,033,354. Dried milk products. FOREMOST DAIRIES Inc. March 16, 1964 [March 20, 1963], No. 10925/64. Headings A2B and A2E. "Instant" fat-containing milk is manufactured by forming moist discrete spraydried particles of fat-containing milk solids, for example by spray-drying milk concentrate preferably in the presence of lactose seed crystals, and subjecting these particles to a rapid heating to 130‹F.-160‹F. in an atmosphere of steam mixed with droplets containing lecithin, with intermingling of the heated particles, whereby the particles become sticky and adhere together to form aggregates which incorporate the lecithin, and thereafter removing excess moisture from the aggregates. The size of the final aggregates may be reduced by impact attrition to obtain a product of greater bulk density. The moisture contect of the initial particles is preferably 6-12.5%. The atmosphere employed may be obtained by mixing atomised liquid lecithin with wet steam. The final product preferably contains 0.1-1% of lecithin. The final drying may be effected in a shaker with air at 250‹F.-300‹F.
