Zusammenfassung:The invention relates to a Pickering emulsion with stable WG-DNPs and application thereof in loading beta-carotene, and the emulsion is prepared by the following method: S1, mucedin and dextran are subjected to a Maillard reaction to form a covalent complex, then the mucedin complex is prepared into a solution, the pH value of the solution is adjusted to be neutral, the ionic strength of the solution is adjusted to 15-25 mM by using NaCl, and then the solution is subjected to ultrasonic treatment to obtain the Pickering emulsion with stable WG-DNPs; the intermediate solution is sequentially subjected to water bath heat treatment, ice bath cooling and freeze drying, and WG-DNPs is prepared; and S2, dispersing the WG-DNPs in distilled water to obtain a WG-DNPs dispersion liquid, and mixing and homogenizing the WG-DNPs dispersion liquid and an oil phase, so as to obtain the Pickering emulsion. According to the invention, the glycosylated gluten protein nanoparticles are used as a stabilizer of the Pickering emul
