The method comprises the following steps: a strain for producing malic acid is inoculated into a fermentation medium containing industrial wastewater for fermentation, malic acid is obtained, and the industrial wastewater comprises concentrated water generated in the process of preparing pure water through a reverse osmosis technology. The method provided by the invention can meet the requirement of malic acid fermentation, realizes reuse of industrial wastewater, saves energy, reduces emission, and is green and environment-friendly. 本发明提供一种发酵生产苹果酸的方法。本发明的方法包括：将生产苹果酸的菌种接种到含有工业废水的发酵培养基中进行发酵，得到苹果酸，其中所述工业废水包括反渗透工艺制备纯水过程中产生的浓水。本发明的方法可以满足苹果酸发酵的要求，同时实现工业废水的重复利用，节能减排，绿色环保。
