Zusammenfassung:	The invention discloses a compound pickling agent for preparing smelly bighead carps and a preparation method of the smelly bighead carps, and the compound pickling agent is mainly prepared from the following raw materials in parts by weight: 5.8-6.2 parts of edible salt, 0.7-1.3 parts of zanthoxylum bungeanum maxim, 1.8-2.2 parts of anise and 0.9-1.1 parts of fennel. The preparation method comprises the following steps: stunning a bighead carp raw material, cleaning with disinfected tap water after treatment, and draining the fish; uniformly smearing a composite pickling agent on the surfacesof the drained bighead carps, and pickling and fermenting the fish; and packaging the fermented bighead carp product in vacuum, and boxing and refrigerating the finish product.
