Zusammenfassung:The invention belongs to the technical field of biological fermentation,and discloses a method for fermenting biological antibacterial molasses alcohol. Molasses is diluted to 55-65 Bx,heated,sterilized and clarified,then ammonium sulfate is added into a part of materials,the mixture is diluted to 10-12 Bx after cooling and flows into a seed tank,active dry yeast is inoculated for culture,the cellconcentration of the yeast is controlled to be 3 hundred millions/ml or above,the brix of the yeast is 4-6 Bx,and then the mixture constantly flows into a main fermenting tank; the other part of materials are diluted to 46-48 Bx to serve as a fermenting culture solution,the mixture constantly flows into the main fermenting tank,the yeast number in the main fermenting tank is controlled to be 2 hundred millions/ml or above,the corresponding brix is 18-22 Bx,the main fermenting tank is filled with the mixture,then the remaining mixture sequentially flows into follow-up constant fermenting tanksuntil fermenting is matur
