Zusammenfassung:The invention relates to a processing technique for preparing debitterized lemon seed oil by cold pressing. The processing technique comprises the following steps of 1), screening, performing acidolysis and enzymolysis on a lemon seed: enabling the lemon seed to be suitable for oil pressing; 2), three-stage low-temperature oil pressing of the lemon seed; (3), debitterizing of coldly-pressed lemonseed oil: firstly carrying out enzymolysis on a bitter substance by using a debitterizing compound enzyme, then carrying out adsorptive debitterization by using a solid debitterizing agent, and finally, adding sucrose and beta-cyclodextrin; 4), refining operation of degumming, deacidifying, deodorization, decolorization and the like of the debitterized lemon seed oil.
