Zusammenfassung:The invention discloses a method for extracting grape anthocyanins, which comprises the following operation steps: (1) taking a grape raw material, adding an extractant and standing, wherein the extractant is prepared by mixing ethanol and furan, and the volume ratio of ethanol to furan being (1 to 2):(0.5 to 1.5); (2) placing the matter obtained in the step (1) by standing at subzero 8 DEG C to subzero 1 DEG C, taking out, heating to 40 DEG C, and then heating to 65 to 85 DEG C, and maintaining the temperature for extraction for 1 to 3 hours, so as to obtain the grape anthocyanins. By adoption of the method disclosed by the invention, the extractant can extract more anthocyanins contained in grapes, the method is simple and time-saving, and industrialized production is easy to realize. 本发明公开了种葡萄花青素的提取方法,包含以下操作步骤:(1)取葡萄原料,加入提取剂,静置;其中,所述的提取剂由乙醇和呋喃混合而成,按照体积比乙醇:呋喃=1~2:0.5~1.5;(2)将步骤(1)中静置后所得物质放入-8~-1℃放置,取出,升温至40℃后,再升温至65~85℃,保持该温度提取1~3小时,即得。采用本发明方法后提取剂能够提取更多葡萄中含有的花青素,且本发明采用简洁,耗时短,更容易实现工业化生产。
