The preparation method of the canned Luchuan pork comprises the following specific steps: (1) raw material treating: Luchuan pork is peeled, the peeled Luchuan pork is washed, and the washed Luchuan pork is cut into blocks; (2) a first boiling: the pork blocks and a boiling agent are mixed to be boiled; (3) pickling: the boiled pork blocks and a pickling agent are mixed to be boiled; (4) a second boiling: the pickled pork blocks and pickling agent are mixed to be boiled; (5) packaging; and (6) sterilizing: the pickling agent is mainly prepared from cherries, strawberries, begonia fimbristipula, grape skins, chamomile, fructus schizandrae, carboxymethyl chitosan, diethyl methyl chitosan, wheat germ lipase and bromelain in certain parts by weight.
