Zusammenfassung: | The invention discloses a production process of monosidum glutamate by sweet potato starch. The production process comprises the following steps: adding middle-temperature alpha amylase, xylanase and glucoamylase in sequence to prepare starch enzymolysis liquid; then configuring a fermentation culture medium; selecting corynebacterium crenatum B9 and inoculating a strain to ferment, wherein the inoculation amount is 1%; the fermentation temperature is 37-39 DEG C and the culture time is 25-28 hours; after the fermentation, extracting and carrying out refined processing to prepare the monosidum glutamate. The purity of the monosidum glutamate prepared by the production process reaches more than 99.3% and completely meets national requirements on salt-free monosidum glutamate; the process disclosed by the invention has the advantages that the strain can be directly inoculated to ferment, and the fermentation efficiency is high, and the fermentation time is short and the cost is saved. |
