Zusammenfassung: | The present invention relates to a flexible packaged enteromorpha prolifra preparation method. Enteromorpha prolifra with big flower buds but without flowers are peeled, cut into petals, put into boiling water to be blanched, and pickled with a mixture of 5% vitamin C solution, 3% edible salt, 0.25% white vinegar, and 0.2% calcium chloride. The pickled enteromorpha prolifra are moved out and the surface water is drained, and the drained enteromorpha prolifera are immediately cooled to a temperature of -5 to -8 DEG C; dudleya greenei, cornus officinalis and water as a weight ratio of 5 : 1 : 1 are mixed and boiled for 30-40 minutes and the residues are filtered to obtain a decoction liquid, the decoction liquid is cooled, tea polyphenols, phycocyanin, sodium copper chlorophyllin and naringenin are mixed with the cooled decoction liquid and prepared into a filling liquid, a PH adjusting agent is added into the filling liquid to maintain the PH of the filing liquid at 3.12-3.42; and the filling liquid and enteromorpha prolifera at a weight ratio of 1 : 1.5 are packaged into bags and sealed; the sealed enteromorpha prolifra finished products are heated at 100 DEG C for 5-8 min and preserved at a pressure of 250-280 MPa for 18-20 min. The prepared flexible packaged enteromorpha prolifra product has a shelf life up to 24 months, does not easily change color, and does not has phenomena of going moldy, bulging bags, and being soft, rot and stink. |
