Zusammenfassung:The invention relates to a method for preparing small-molecule collagen polypeptide powder by using poultry skins and application of the small-molecule collagen polypeptide powder in fruit juice beverage, belonging to the technical field of food processing. The method comprises the steps of: preparing poultry skin raw materials, removing other proteins, removing fat, conducting enzymolysis in an alcohol-soluble system and drying and removing alcohol to obtain collagen polypeptide powder. The prepared fruit juice beverage comprises the following components in parts by weight: 0.05-0.1 part of collagen polypeptide powder, 35-50 parts of raw fruit juice, 2-5 parts of raw lemon juice, 6-8 parts of white granulated sugar, 0.08-0.20 part of Arabic gum, 0.01-0.04 part of sodium carboxymethylcellulose, 0.01-0.05 part of potassium sorbate and 100 parts of purified water.
