It was found that edible oil-in-water emulsion compositions comprising sucrose fatty acid esters mainly containing sucrose monostearate or sucrose monopalmitate or a combination thereof, are highly suitable as multipurpose dairy cream alternative compositions. In particular, edible oil-in-water emulsion compositions according to this invention are both whippable and do not aggregate or coagulate in hot acidic media. La présente invention concerne une composition de type émulsion huile dans l'eau comestible, un procédé de préparation de la composition de type émulsion huile dans l'eau comestible et l'utilisation de la composition de type émulsion huile dans l'eau comestible. L'émulsion huile dans l'eau comestible est de préférence une composition multi-usage servant de succédané à la crème à base de lait. On a découvert que des compositions de type émulsion huile dans l'eau comestible comprenant des sucroesters d'acides gras, contenant principalement du monostéarate de saccharose ou du monopalmitate de saccharose ou une combinaison de ceux-ci, conviennent particulièrement bien en tant que compositions multi-usages servant de succédané à la crème à base de lait. En particulier, les compositions de type émulsion huile dans l'eau comestible selon l'invention peuvent être travaillées au fouet et ne caillent ou ne coagulent pas en milieu acide chaud.
