La présente invention concerne un procédé d'extraction sûr n'utilisant pas, ou peu d'émulsifiant ou de solvant organique et équivalents, et permettant d'extraire de manière efficace des composants de diverses substances extractibles. Lorsqu'un composant à extraire est un principe actif, le procédé permet de garder une teneur élevée de celui-ci. Le procédé d'extraction permet d'extraire une substance extractible en la mettant en contact avec de l'eau contenant des microbulles. Avec le procédé d'extraction, il est préférable d'utiliser des microbulles ayant un diamètre particulaire moyen inférieur ou égal à 500 nm.
