La présente invention concerne des compositions de teinture desséchées par pulvérisation et solides au lavage (de préférence sous la forme de poudres de pigment) présentant un taux de dégorgement = 0,5 % et composées de teintures fonctionnelles hydrosolubles, de préférence des teintures alimentaires, qui sont fermement incorporées dans une matrice de silice. En dehors du faible taux de dégorgement de la teinture, ces compositions sont remarquables pour leur stabilité élevée face à des changements de pH et/ou à l'acide ascorbique. L'invention concerne également la production de compositions de teinture et leur utilisation.
