Zusammenfassung:It should be understood that beef in Brazil is highlighted due to its high consumption and its production capacity, commercial relations take place in different ways such as: from the producer to the refrigerator, from the refrigerator to the retail, from the retail to the final consumer. In this article we tried to implement the P + L, where it has an importance in the attempt to reduce environmental impacts, since it improves the productive techniques. As a development of this work, researches were carried out in literature relevant to the subject and in loco visits. During these visits were observed the routine of the enterprise and the employees. The team carried out surveys in the enterprise for 3 days, so that it was possible to identify the fragilities of the company in relation to environmental and sanitary issues, after which it defined goals and objectives that the company should obtain for the implementation of the environmental plan. An "ECOTIME" with 4 employees was formed. A total of 22 kg of cardboard, 0.84 kg of paper for the administrative sector, 4.8 kg of packaging plastic, and 2.3 kg of non-recyclable waste were counted at the end of the 3 days. Based on the indicators collected together with the entrepreneur, the following monthly data were obtained, where the water consumption is 11m³, energy is 2839.3 KW, solid waste of 750 kg, raw material of 3000 kg and food products was of 1500 kg. Then the conclusion was that the company has challenges to be faced, such as reducing costs, adopting clean technologies, taking care of the environment, among other actions that are fundamental for the company to remain competitive in the market. Thus, the adoption of the P + L system represents an important step in relation to environmental management. Deve-se entender que a carne bovina no Brasil tem destaque devido seu alto consumo e a sua capacidade de produção, as relações comerciais se dão de distintas formas tais quais: do produtor ao frigorífico, do frigorífico ao varejo, do varejo ao consumidor final. Neste artigo procurou-se implementar o P+L, onde tem uma importância na tentativa de redução de impactos ambientais, haja vista que melhora as técnicas produtivas. Como desenvolvimento deste trabalho, foram realizadas pesquisas nas literaturas pertinentes ao assunto e visitas in loco.
