The proximate composition of millet blends instant adai mix contained higher protein, fibre and minerals such as calcium, phosphorus and iron. Sensory attributes of instant adai mixes were highly acceptable. It can be stored in Metallised Polypropylene with antioxidant for the period of 180 days. The cost of small millet based instant adai mix was worked out to be Rs.8.23 (T1 ) and Rs.7.78 (T2 ) respectively.
