秋令话老南京“水八鲜”
八鲜者,八样当令时新滋鲜味美之物也。此词最早见于清代李斗《扬州画舫录》:"坝上设八鲜行,八鲜者,菱、藕、芋、柿、虾、蟹、车螯、萝卜。"车螯即蜃,生大海中,是大蛤,其壳色紫,璀璨如玉,斑点如花。海上人以火炙,则壳开,取肉食之。肉可食,壳可饰器物。当时的八鲜是包括动植物的,八鲜名一出,遂被人们所接受。以后派生出"三鲜"等,如炒三鲜、烩三鲜、三鲜包、三鲜面、三鲜汤、三鲜馄饨等,也是肉蔬混杂,非指某一类型(用肉蔬混杂是因为韭菜、葱蒜等属于五荤,鸡鱼肉鸭也是荤)。...
